I am going to sell two of my 17x9 rims and buy two 17x11 zr1 rims and am wanting to know the best backspacing to get so I will not have to hammer the wheel well or alter anything.
your going to have to hammer the wheel well with the 50 mm offset. but with the 35mm offset you might have to roll the fender if your car is SLAMMED. it really just depends on what look you want. if you want it to look like the OE wheel face and just tuck under the car more then go with the 50mm but if you want the "deep dish" look and want them to come out a little more (yet still sit flush with top of fender) then go with the 36mm.
What do you mean by hammer the wheel well, or roll the fender? I'm also considering 17x11's for my stock '01 Camaro SS. I've got chrome fender flares that will allow the wheels to come out a bit, or maybe that's not even an issue? Sorry, very new at this.

depending if your car is lowered or not you might have to hammer on the inside of the fender well (it doesn't hurt anything) or you might need to roll the lip on the inside of the fender. IMO i'd loose the chrome fender flares lol. but that's just me though...

Sorry if I sound like an idiot, but I'm imagining taking a steel hammer and banging away for the first one and for the 2nd one imagining curling the fender in. Is that correct or I am way off?

You basically got it right. First you mount the wheels and tires, drive it around the block - you'll hear the rubbing, nothing major. Then where the tire had rubbed the under coat off you take a big a$$ sledge hammer and beat those areas in. Re-undercoat and test drive - repeat as necessary. Sounds crazy to beat a car with a big hmmer, but what we'll do to have big wheels.
A 36 mm offset five spoke looks like crap on a Camaro - IMHO, so I won't go there.
And fender rolling can be acheive a variety of ways but there are fender rolling tools available for rent, that are said to do a nice job.

Won't EVER happen. Sorry you will HAVE to do body mods to fit a 17" x 11"
lol no you don't HAVE to do body mods, i just depends on the car. i've put MANY sets on camaro's. i just put a set on Wayne Lominacs car, the sales rep at MTI. i didn't have to do anything. call up there and talk to him if you have any questions. if your car is lowered you most likely will though. although his was it wasn't lowered enough to rub. it might rub if he has 4 people in the car though. if you don't want to alter anything get the 36 mm offset and don't lower your car.
yes basically, unless your car is lowered. i'm not promising anything because every car is different. but even IF you have to do anything it will be the the inside of the wheel weel. and it's just metal that you bend. you can't see it from the outside nor is it noticable even with the wheel off. i've done everything from 17X11 TTII's to fiske FM5's and if you car isn't lowered you won't have any problems. where are you located at?
