275/40/17 is the factory size for your SS, so yes this will fit without issues.
315/35/17 is commonly used on the rear but, depending on tire brand (some run narrower than others) and wheel width, you may need to do some quarter panel lip or inner wheel well clearancing. You may also want/need an adjustable panhard bar to better center the rear for improved clearance.
Proper offset will depend on wheel width, which you didn't specify.
