Default Replaced starter, new electrical issues?

For context: 2002 Camaro with the 5.7 LS1

I recently changed my starter cause it was having difficulty cranking and would often drain my battery to the point of needing a jump. Well after I installed the new starter I started having all kinds of new problems.

originally the car wouldn稚 start, traced it down to the ground terminal hardware was stripped and not making good contact. Replaced that and the car started fine. Shortly after driving it around my dash cluster started freaking out. Like I壇 hit a bump and all the lights come on, the gauges bottom out and restart, mileage screen shows zeros for a second then goes back to normal.
next day I drove it and I値l be sitting in a drive through it something and it値l randomly die. Starts right back up, but it値l die if I知 just sitting there for too long.

I know the starter is hooked up correctly cause I put the new starter in the exact same way the old starter came out. Nothing is misplaced and everything is tight.
I already cleaned the ground wire that attaches to the body near the battery, terminal eyelet and mounting space are clean and tight.

where do I need to start looking and what do I need to look at?

have you tested the alternator ? and the battery ? I would start there since the alternator is good. and of course check all of the grounds.
