Default Adjustable line output converter ???

It looks like I'm going to be putting my stereo equipment (from my old car) into my z28. I have everything I need but new speakers for mids and highs.

I was wondering if I kept the factory monsoon HU, instead of putting my other one in, would I get the same sound quality from using an adjustable output converter since the monsoon HU does not have RCA outputs? I have 2 small amps (1 to run the front and 1 to run the back speakers) and a bigger one to run my 12. I have an EQ To run the RCA from the converter into to run the 3 RCAs to the 3 amps.

Also, what are the 2 dials for on the converter (what do they actually adjust)?
