2 channels can be used to drive 2 speakers independently, 4 channels to drive 4 speakers independently....
that's the very most basic way to think about it, because of course you can bridge/strap/etc and turn 4 ch amps into 2 ch ones, 2 ch amps into 1 ch ones, wire speakers differently to drive more...etc etc...

The simplest use for the channels is for stereo separation. With a 2-channel amp you have left and right. With a 4-channel amp you have left front, right front, left rear, and right rear. As fredmr39 said, there are many other ways to use the channels but that's the easiest to visualize.
