Default need to know coolant temp wire

does anyone know the wire that is used to send coolant temp signal to gauge?

The PCM wire for a '99 is the BLUE connector #74 yellow wire. Engine Coolant Temperature (ECT) Sensor Signal. The other is a ground.

as soon as that is hooked up to my factory temp gauge wire the engine dies. on a fbody how does the factory gauge get a signal from the ecu?

You can't use the factory coolant temp sensor for a gauge. It is ONLY for the PCM. On a factory F-body the gauge operates from serial data generated by the PCM (that's why they are fairly inaccurate). You'll have to add a sending unit for your gauge.
