What T-Stat for this Fan Activation?

What T-Stat for this Fan Activation? My fan activation set-up looks like this:
Fan 1 on 198
Fan 1 off 191
Fan 2 on 205
Fan 2 off 195
I told the tuner that I wanted to go with a 180 Stat, does this match up well with a 180 Stat? Or should I get a 160 and let the coolant flow earlier?
