Is it worth it to soend the extra $200 on headers to buy ceramic coated headers, or are the non coated good enough...

Always go with ceramic coated. If you can't afford ceramic, wait to buy the headers until you can afford ceramic.

you can get the ebay stainless pretty cheap but generally stainless is more expensive
