62cc chambers will net you right at 11.0:1 on a stock LS1 short-block with a GM MLS head gasket.

Use this calculator: http://www.rbracing-rsr.com/compstaticcalc.html
Stock LS1...
Bore: 3.898"
Stroke: 3.622"
Head gasket thickness: 0.051"
Deck height: ~0.006"
Piston top volume: 0cc
Combustion chamber volume: 66.67cc
Now change the Combustion Chamber volume to 59cc and see what compression ratio that gives you.
Head gasket thickness from GM Perfromance catalog p.210:

Milling .007 off the deck = about 1CC on LS heads so do the math, that's with no CNC work done to the chambers. 241 heads are about 66C chambers so that should give you a good starting point. 59CC chambers will net you 11.5:1 this I know because I had 241 heads w/ 59CC chambers. Your looking at 62 to 61CC chambers for your 11:1
