Default Wierd issue with my car, any ideas?

2000 Camaro SS (orignal owner)
~65k miles
-mods: directflo lid, SLP longtube headers w/out CATs w/ O2 sims.

Occassionally when starting car the RPMs will jump around as does the voltmeter just above the red, lights dim. Car wants to die and if you try to drive it you really have to work the throttle/gas to keep it going. However, within a 5-10minutes it normally calms down.

The next time or few times you hop in and start it up it runs fine, like NOTHING is wrong.

Then it does it again...

The battery is a replacement (but is still old - was pullled from another car) and the alternator is original. However, both were checked @ Autozone and tested positive/fine/ok. Fuel filter has been changed a few times over the life of the car, not sure of the last exact date.

I looked around while I was taking the alternator out to be tested - no holes in the longtubes rusted thru or anything. Air filter removed and checked, nothing blocking the MAF.

Any ideas or guesses?!

Thanks guys.
