I currently have a corsa exhaust so i'll probably go with the stainless steel.
About how much will they charge me for installing the headers and y pipe?

Depends on the shop, I have read anywhere from 350 to 600 or so. If I were you though I would save my money and install them myself. They are really easy to install, it just takes some time

get the qtp headers and install youself, very easy. the only things in the way are the oil filter and drain plug (sometimes, just take it out anways) i do not recommend getting their y pipe, it is not stainless and a piece of garbage, yes i paid 500 for mine new and it was not worth it. get a custom one bent that is stainless and that fits better. oh by the way headers sound awesome with the corsa system with or without cats. i had cats, then one blew out, like the gutted cats better

Sound is subjective. I don't particularly like the sound of corsa without cats. QTP and Kooks are nice but living in texas you won't see the full benefit of stainless. Probably still worth the money, but any ceramic coated mild steel should hold up just fine. There are several LS1 shops in texas, but then again it's a big state so who knows how far they are. Header install isn't very hard at all, and to most is well worth the $300-$350 savings in labour plus the satisfaction, peace of mind and experience.
Oh yeah: header questions belong in external engine, not internal.
