Can 2.02/1.60 valves be put in 5.3 heads?

Can 2.02/1.60 valves be put in 5.3 heads?
Just wondering if these sized valves can be used and not be an issue with the valve seats? I'm thinking of using this setup with a larger cube engine eventually.

First you mean valve seats not seals and you will have no issues doing that to those heads. But if you were to go with a bigger cubed motor you may want to go with bigger intake valves.

I've been talking with a local engine shop, and they told me that new and bigger valve seats will have to be put in each side or the valve will be touching aluminum, thus making the valve seat fall out eventually. Is this right?

Don't know about your second question but I do know you can have 2.02"in and 1.60"ex valves installed. I had these in my 5.3 heads, how many cubes are we talking about on your set up? I don't think you'd want to use them on anything over the 5.7's 348in because of too high of a CR in my opinion.
