Default combustion chamber sizes

I'm looking at getting a h/c setup in the near future and was wondering what changes with combuston chamber sizes of the head?
I've seen most are between 59cc and 72cc and pretty much anywhere in between, what does this affect?

Compression.
The different CC heads makes different compression.
The 6.0 heads will give you the least and the 5.3's will give you the most.

So if I am going to be spraying, higher or lower compression?
