installed a cheap torque converter recently. maybe had 3 passes on it for tuning. could that be my issue?

Did the trans shift after you first installed the converter?
Are you sure you are in first?
A trans that does not shift is often in "limp" mode and actually starting and staying in 3rd gear - obviously it will feel very sluggish.
A high stall converter will often cause "limp" mode until it is properly tuned, but limp mode should be reset when you turn off the ignition.
You might try disconnecting the battery for 30 minutes (or touching the disconnected battery cable together for a few seconds) to clear the PCM and see if that fixed the problem.
Even better, before you reset the PCM, scan it for codes.

update: pulled the tranny this morning, and drained the fluid from the TC, and lots of metal in the fluid. something is defiantly fried. looks like a rebuild in my future

Both sponsors RPM and FLT have a great reputation at that power level (and up).
Sponsor Performabuilt has a new build to handle that power level too.
Closest to you would be sponsor Jake Performance in northern Texas.
