If you unplug the MAF sensor or take it out, the PCM will switch to speed density mode. It shouldn't give any ill effects aside from a code if the PCM is tuned well to begin with. However, to run in speed density mode, you will need to spend more time tuning than with a MAF to change the VE tables to best match a motor combo if you're planning to upgrade, because the MAF won't be there to give real time inlet air temp and volume data and TPS signals. The Pro's of running without a MAF is you can sometimes get better driveability and power with a radical big cammed setup.
