Do I need a mailorder tune in order to run a 160 thermostat? Or can I just drop one in and get a tune later?

You don't have to, but to get the best out of it (turn fans to complement, and fueling and timing) I'd get it tweaked.
Mainly because the car has tables that tell it when to go into closed loop etc, if these temps take forever to be reached , or never reached the car will run in open loop most of the time and suck alot of gas. If the car is in open loop with the stock settings as well it will also have a hard time locking the converter.

u dont need a tune for a 160 but yeah the fan could come on sooner considering they dont come on until 218 and 225 in fact i dont think the second fan comes on until close to 240 so the fans coming on sooner will do a better job at cooling the car then a 160 anyway i just takes longer to worm up i dont even have a stat in mine as of now but im gonna put one in cause winter is here and it takes about 10 minutes to get to 160 now
