How many miles are on your car? you could check the fuel pressure, its possible its not getting the amount of fuel it needs. I had a similar problem changed the o2s but still hesitated. One day went to start the car and just cranked. Checked to see if i was getting fuel to the fuel rails and just drips came out during priming and cranking. Changing the pump as we speak, waiting for the glue to dry. Start with the cheap stuff first, whens the last time the fuel filter has been replaced? could be clogged. Try cleaning the MAF also, any parts store sells maf cleaner.

You kind of need to have a way to scan (if not log)
the key sensors & things like spark advance / retard
to chase this down efficiently.

My prime suspect would be a lean condition which
is closed-loop corrected, but which you roll through
"naked" on tip-in, giving you a knock retard event.
You'd see this as the O2 sensors banging low when
you mash it and a knock retard jump-up (advance
pulled back, and taking a while to return).

I'd go and clean the MAF with clean-drying contact
cleaner especially if you like to use an oiled filter, or
just have never done. Seen even paper filter cars
with some grimy sense elements. Of course if you've
gone and messed with it more substantially it may
take more than hygeine to get it back to right.

But anyway seeing beats guessing and the right tool
saves all kinds of that.

I honestly cant see it being the gauge and splicing into the A/F ratio since i have mine hooked up the same exact way but its just crimped and not soldered. I would still clean the MAF anyways since it isnt going to hurt and the maf cleaner only costs about 6 bucks. When my fuel pump was starting to go out it would work fine one day and then act like crap the other until finally it just stopped pumping but you could still hear it prime.
