Most likely the sensor is grounding out. Check the wiring first before you declare the sensor itself the culprit.
Out of curiosity, have you done any work in the engine bay lately (headers, etc.)? Breaking the sensor is a common problem as it is very weak because of its mounting orientation. Yours is located just above the oil filter on the block.

when my sensor was broken by a tranny shop in the fall of 07 it showed ZERO oil pressure. unplugging it shows pegged though so i would guess your electrical connection got disconnected somehow.
the new sensor they put in sometimes will throw a check gauges light when the car is running warm, like yesterday in traffic during a cruise i was at around 230 deg when the fans kicked on and the oil pressure dropped just above the red where the CG light came on.

When we did a long tube swap, we forgot to plug that sensor back in and it showed maxed on the gauge. When my sensor went out, it would flutter and read zero or read normal, just kind of all over the place. I bet you either didn't plug it in all the way or the wire broke. The one on my 93 was pretty ragged looking. A tip is to make a slit in the side of the rubber cover, this helps making getting that sensor on easier, small slit down the side is all it takes so you can spread that rubber over open and plug the sensor in. OTher wise, kind of a pain.

just finish the car, yea the oil sensor was not plug in at all and had to re adjust the comp rr now it idles fine now. i have to take it to the muffler shop because the y-pipe does not freaking line up.. other than that took it around the block and it pulls 50% better than last time
