Default way too lean!

i need some info on a reputable tuner near metro detroit, i just pulled my plugs after buying someone elses headache. they are coated in snow, bad. (it looks like) i have the disc from epp with the tune. by the way i know nothing about tuning.

oh and plugs are NGK TR6, gapped at .051

383, afr 210 heads, hooker supercomp headers, tuned at epp. 58 mm tb. stock lid. also its throwing a maf code. po100 po103. i think the opti is starting to go. sputter at wot intermittent rough idle. (im a complete newbie thought id get something already worked over some to start. already wish i would have started stock.)

epp did all the engine work. i am wondering if its from the long drive from indianapolis to mid-michigan at low rpms?
