Default ? about stall for current setup

I am wanting to stall my car I have bolt ons and plan on doing a cam setup in the future but not any time soon but the problem now is I have 2.73 gears I'm trying not to get rid of these gears if I don't have too but my question is if I stall the car with these gears will it bog the car down from a launch or no and if it won't what stall would you recommend I'm thinking around 2800 - 3200

Why don't you want to change the gears?
If the answer is something misguided like an incorrect belief about fuel economy get over it.
Proper stall and gears even 3.42-3.73 can make a dramatic improvement and will be required before any later cam considerations.

I made the mistake of cam before stall/gears/headers and even 2800/3.42 was a HUGE improvement from 1400/2.93, and with the 3.43/2800 setup I still put 20K miles a year on it.

If costs are an issue on being hesitant for gears you could always pick up a used 3.42 rear for $100-200 and install it. There is no reason whatsoever to keep the 2.73s if you are going to cam it. Deciding on your cam first is a lot easier than trying to find a cam to match the rest of the car.

Getting rid of those 2.73's should be a higher priority than changing converter or cam, regardless whether you're interested in street performance, strip performance, or the combination of both.

Yeah changing gears should be a priority. Like said above you can find a good used rear with 3.42s for cheap. I'd do that before getting a stall. Fuel economy won't even be noticeable.
