I'm switching my car to an LS3 and want to retain the oil pressure sensor as is to talk to the computer. I'm also wanting to use an external oil pressure sensor to run a dash gage, not connected to the computer. I know I can place the oil temp sensor in the bolt on boss above the oil filter, my question is can I also T in an oil pressure sensor in this location? In other words does this casting see full oil pressure?

Yeah it does. You can pick up oil pressure from that location as well.
