Stock wires (or stock replacements if the originals are worn/damaged) and either NGK TR55 or AC Delco Iridium plugs for an NA LS1, or NGK TR6s for FI/N2O applications.

Stock wires are fine. LS1 have such short ignition wires that lowering resistance with aftermarket wires isn't really necessary. Also, many people have had quality issues with some of the aftermarket wires. If you do go aftermarket, MSD is a popular choice that holds up well for most people.
Only reason to deviate from stock would be for appearance purposes (different color, etc.). You won't see any gains replacing a good condition set of stock wires.
NGK TR55s can be bought from many sponsors of this site. Pick your favorite company.
