Aerospace components offers a single and double mount: http://www.aerospacecomponents.com/sin-bracket.htm#sb
Edelbrock also offers a nice quick release mount and some polished billet mounts. My experience with the brackets like the one from dyno tune is that they tend to rattle.

Cause they need to be fricking huge to fill the holes and I'm not sure it would be safe to screw something that big in between the seats on the hump? If some one else has done it and it worked then I'll do it.

Yeah you definately would want to use bolts with nuts n washers on the bottom. Self tapping screws would be fine if it was something light, but a bottle brackett should be secured.

I put a bracket like this between the back seats. Fits a 10lb bottle nicely w/o bumping the console. Had to buy some longer bolts, but they feed through the sheet metal and come out in the tunnel, secured with washers & lock nuts. It's very sturdy. I'd only suggest you move the emergency brake cables out of the way. I didn't & I nicked one w/ the drill. Mine was the non-heater one from dynotune.
