Is it possible to replace the regular HPP3 tune for a tune that would be correct for my mods in my 00' SS. I've heard that you can send them out with a Dyno test sheet diagram and they can Set a tune for that. Is this possible? and if so where to send it ?

not possible to my knowledge.

the predator can do something limited like that, however, you can't properly tune a car with just a dynograph, you need the maf frequency vs air fuel ratio to do it right.
