Default bad prooblem after stroker motor installe

When I give my car gas, and start to rev it, it kind of misses real bad. I mean for example from 2k to 2.5K its like the motors not doing anything then all of a sudden it catches. It could be a miss or something. Its also fowling out the plugs with fuel.

It was throwing 02 sensor codes, coolant temp sensor code and i replaced both and same problem still. When I first put the motor in, it ran fine for 20 miles. Then started doing this off and on, then now all the time. Sitting here thinking, Ive been changeing my spark plugs so much I do some of them finger tight. But I dont think i leave them loose enough to miss. But still.... I am very frustrated with this car. Any ideas? No codes.

I did have it tuned, I thought it may be a bad tune from the bad 02s and coolant temp sensors but i installed the stock tune and the problem is still here.

Stock tune probably -is- your problem. You went up
in displacement and the speed density tune is using
a wrong (small) cylinder volume, miscalculating the
airflow low and fueling for that, only when you start
to have the MAF come online or the short trims get
you corrected does it start fueling right. Basically you
have a Doberman that thinks it's still a Chihuahua.

I have hp tuners, any idea on what I could mess with on it to see if it helps it run at all? I have a dyno tune, but one of the vacume lines behind the intake may have been off and it was doing the same thing on that tune as well as the stock tune.
