Why did the LTFT's reset after refuel?

Why did the LTFT's reset after refuel? I was unaware that the LTFTs reset after a fuel up...We were doing some logging on a buddy's car and the LTFTs were in the +15-20 range and we stopped for gas and they were immediately near 0 and slightly negative. After about 15 min of driving, they started moving to the high positive range. Obviously they need to be adjusted.
