Default new wiring harness??

does anyone know where i can get a new 1999 m6 wiring harness??

Which one? There are a half-dozen primary wiring harnesses and dozens of secondary harnesses in your car.

all of them, every harness there is...i have the car in peices right now because i'm in the middle of a VERY extensive build up and i dont want to leave anything over looked. its always the littlest things that screw you up, so i want to replace the harness along with all of the stock sensors and seals blah blah blah that arent replaced by new parts/kits

Do you have any idea what that will cost? Just the nine primary harnesses total almost $3500 and then you still have lots of little secondary harnesses that might nickle-and-dime you to death.

A few of examples:
Front lamps harness: 12177746 $916.20
Engine harness: 12177653 $568.70
Instrument panel harness: 12177695 $901.80
Cross body harness: 10305013 $436.60

These are all GM suggested retail prices. The part numbers are based on a 99 LS1 Z28 with 6-speed manual, power windows, locks, mirrors, seat, cruise control, traction control, fog lights, and Monsoon sound system. Don't use the part numbers unless that is exactly what you have - they vary considerably for different options.
