Whats the diff. in these rockers? What are the differences and advantages or disadvantages of adjustable and non adjustable rockers? Either way which one is better?

Stick with the stockers, They will be more than enough for what you're looking to do. If you're really worried about them just send them off to Harland Sharp and have them rebuilt so you don't have to worry.
