Default head/valve angle

I have been wondering this for a while and just now thought to post

What exactally does it mean when somebody is talking about the angle of the cylinder head. For example i want to say i read somewere the ls engines have a 13 degree cylinder head (i could be wrong). As compared to old SBC heads whick were 8 degree (once again i could be wrong, been a while since i read th article). Is that the angle in which the head sits on the motor or is it the angle the valves are at? What is the advantage or running more or less of an angle?
