Why "zero deck" custom pistons?

that would affect it so much , somewhere around .21 gain in compression

The quench depends on the material in the block... iron and Al have different quench needs.

I believe it is closer to .30 but my point is there is going to need to be some adjustments made to lower the compression for a street car and most definitely on a forced induction so why shoot your self in the foot and start with a piston .008 out of the hole. I am pretty sure that is what the piston manufacture was thinking.
