There is still a cam. The rocker pivot can move which is what varies duration and lift. The engine actually has no throttle butterfly. Throttling can now take place through valve lift and timing.

VANOS is only a cam phasing mechanism. It uses a solenoid and oil pressure to advance or retard the cam. Single VANOS is on one cam and double VANOS means it's on both cams(intake & exhaust). Valvetronic is the variable rocker pivot system that changes duration and lift. As far as I know, it was only ever offered in a 7 series. Not on the V10.
