If i was to get a new headunit, would my steering wheel controls still work?

If you get the Alpine head unit that is made for GM/Chrysler size (1 1/2DIN) you can buy an adaptor to use for the steering wheel controls.

yes you can get any HU as long as your head unit uses a infared remote control you'll beable to buy a wiring harness that will make it work with factory steering controls check this link:
