Find a high quality upholstery shop. They will have done hundreds to thousands of cars. Steering wheels aren't that bad to do, and I actually think that one is a little poorly done by having kept the stock sections, but the airbag covered is great work. Problem with the dash is it might sag in the summer. You could look around online for a shop for the steering wheel too. Get one that is beat to hell off of ebay and send it to them. What it looks like doesn't matter once it gets covered. Swap in your buttons, and sell your old steering wheel on ebay. Presto, no down time and make up a little of the cost.
