Ok, since nobody mentioned this:
You can easily tell the 98+ V6's apart from the 98+ V8's just by looking underneath the car at the Y-Pipe exhaust set-up. LS1's have that "undistinguishable" flat-sided Y that hangs down very low while the L36's have a completely different set-up.
It doesn't get any simpler than that no matter what the cars have or how they might look. And yes, the most "official" way is to look under the hood!

Okay folks.. In 93-94 all Z28's had Black Roofs and Mirrors. In 95-97 GM permitted an option to have a Z28 with Body Colored Roof and Mirrors so it was hard to distinguish the Z28's from the V6's again.
In 98-02 if I'm not mistaken GM went back to just Z28's having black Roofs. 98 had black mirrors.
The only V6 in 98-02 that you might have trouble with is an All black Camaro.
FWIW.

If the LS1 was in there from factory, one of the characters in the VIN # (5th one I think) should be the letter "G". That indicates the V8 version of the car.

I say just listen to the exhaust note....that's the biggest of them all....V8's sound way different than V6's.....also just race it and find out........I have a 98 Z convertible and it has red colored mirrors same as body color....
