probably no other choice other than to make a custom bracket. Ive been dealing with this for a while now, however Im nowhere near your size, im only 6'2" 280. Ive been messing with seating position with aftermarket seats. I had 6LE seats that I needed to make fixed position in order to not have an eye full of sun visor and be comfortable, now I have Corbeau Forzas that I am working on a bracket that will incorporate the sliders so I could move the seat as necessary. Ill post up what I did when I actually become unlazy and do it.

Could also just move the seat mounts (Bolts) back an inch or two. Will involve a bit of welding to add support under the car for them, but it would be 10X easier than dealing with a custom bracket.

Not with 6LEs bracket and the seat. If I sat up straight half my view was sun visor. Once I made the seat fixed and deleted the rails I was able to sit comfortably

I'm 6'6" 290 and have no issues in my 96, can actually put the seat all the way back and barley be able to reach the steering wheel, not comfortably.

+1 It would be up to the welder. I've haven't played with the stock seats. I've only modified the stock brackets.

I made a thread showing the custom bracket I made that will move my seat 3" to the rear and sit lower while keeping the sliders
