Fuel filter should be done every 20k or so, again cheap insurance if you can change it yourself.
Wires on LS1's really never need changing unless there is evidance of physical damage. The stock wires perform beyond the needs of the engine, and do a very good job at noise suppression wich can not only interfere with the radio but the ECM.
Coolant I wouldn't worry about till 50k at least, the factory says 100 but I'd at least do a drain and fill (flush is not necissary) at 50k. Use ONLY GM approved Dex Cool!!!!
Plugs I would do at 30k, the factory says 100 but I've seen them in poor shape by 30.
PCV I wouldn't bother with unless you have an oil consumption issue.
I'd also think about doing rear gear oil at around 50k, and brake fluid flushes every 2 years. Now would also be a good time to check the condition of the belts.
