If you let it warm up you should be able to pull the dipstick, wipe it clean, put it back in and then get a pretty accurate reading.

No you shouldn't have to pull the tranny back out, just let it warm up with no load and get an accurate reading.

I don't want you get the idea that it's okay to run it with WAY too much, but I highly doubt you have enough in there to cause any damage just idling and warming up so you can get an accurate read.
Line pressure is the key, if it's just idling the convertor isn't spinning the pump overly hard and not creating any major amounts of pressure

No prob bro, hope you get it all figured out and get to enjoy the new parts. My car has had many transformations and simple adding of a converter still ranks within the top 3 of noticeable mods for me.
