Cam and no converter..
Going into my 2001 2500HD 4x4, LQ4, 4L80, 3.73 gears on 35" tires (measure out to 33"). Yes, I've posted this in PT.N, just a little more lively over here!

If not already clear to you, will have have to get a tune immediately after installing the cam. The engine may not even hold an idle and you definitely should not try even medium throttle as the engine will be running dangerously lean with a stock tune and a hot cam.
Have the tuner increase the TCC apply speed to 50 mph (corresponding to about 2200 rpm) or the engine will buck/surge when the TCC locks up.
With your 33" tires and 3.73, that is the same as a 2.94 with typical 26" tires. Since you say you rarely go over 3000 rpm, I would just go with the stock converter for now.
Unless you cam specs are for 3000+ power band.
