A 750 VS carb will be fine....they put 780's on 302 chevy's back in the day (high rpm motor)
For the street a VS carb is fine....trying to get every ounce of power... a DP carb is the best choice.

I do have to add that when I daily drove my '70 Camaro, I switched from a 780 VS carb to a 750 DP. The car was immediately more responsive and fun to drive. There weren't any drivability issues at all like people try to say there will be. I honestly don't see any reason for VS carbs to exist. This was with a mild SBC that ran high 12s. Now, going too big is a real thing. But it takes a significantly over-sized carb to really make it noticeable.

You can fix that with a wideband and some machine drills. All you have to do is drill out the PVCR and then jet down until the cruise is in the 14:1s and the WOT is in the 12-13:1s and viola. Same fuel efficiency as a VS if you can control your foot.

Holleys,, Infin adjustable. was racing em back in the 70's. Always replaced em with carters or Q-jets. Many carb builders and myself always thought holleys had too many band aids. Couldn't run em and forget em. Do the Q-jet. you'll be much happier and have gas money left to go buy a beer and watch someone tune they're holley ,,,again. (IMO)
