Gauges On Carb Setup. I know I can get npt adapters and put Gauges in. But I was wondering if there were any aftermarket Gauges that plug directly into the stock senders.

Not sure. All sensors are different, so you will either need to get a generic gauge that can be programmed for a generic sensor or find ones specifically made for the donor engine.
The only 3 you need to worry about are oil pressure, water temp and maybe fuel level. Speedhut makes some nice gauges but include senders for the oil and water temp.
You might check Dakota digital. They make a digital dash that runs off OBDII. They might have fully programmable gauges.
My suggestion would be find the gauge style you want than plump in the sensors that come with the gauges
