Beware of layering stuff up on upside down surfaces, it pretty much all falls off when the weight starts to add up.
Also beware of vertical surfaces, even with high temp adhesive, with a lot of MLV weight sometimes the layers of MLV will slowly "slime down" the vertical surface when the interior gets really hot and the adhesive softens (with the peel and stick stuff at least) I usually use a hole saw to cut small holes thru all the layers down to metal then fill the holes with window weld urethane, and also window weld urethane all the corners, seams, etc. Helps everything stay in place on those hot summer days.

NOT real smart to weld without a mask or goggles...!! 
With that said, this is a beautiful build, & I'm sure the final product is going to get a lot of (well-deserved) attention. (It's almost going to be a shame to drive it!!)
One last thing - I was second-guessing your decision to not add subframe connectors - until I realized that all of that undercoating & sound-deadening material that you've applied would accomplish the same thing!!!

Lots of tacks welds, squeeze your eyes shut tight, shield the weld area with the nozzle, and let er' rip lol.
I almost fabbed up some SFCs, but deemed them unnecessary. If the car made it 20 some years with no chassis issues with a 355sbc, a stock LS1 is never going to hurt it on 195 wide performance touring tires.
I did go over the entire chassis and "stitch weld" anywhere possible. I don't usually feel this is necessary, but these cars come with minimal spot welding from the factory, so in this case I decided to do it. Between that and all the bedliner and sound deadener it probably is pretty solid lol!
