I could come up with a few...here's some I probably wouldn't do myself, but would like to see:
LSA 6.2L/supercharged/6L90E in a Cadillac Catera (because they ALMOST made V8 Omegas using the LS1)
6.0L/EFI/4L80E in a 91-94 Lincoln Town Car 120 inch stretch limo (so everyone can enjoy it at once)
LS4 5.3L/EFI/F40 (6-speed manual) in a totally innocuous N-Body (Skylark/Acheiva/Grand Am) or a Corsica or a Lumina or something*
here's some I already want to do for sure:
4.8L/carb/700R4 in a '65 Chevy BelAir/Impala 9-passenger wagon
5.3L/carb/M22 4-speed in a '73-'77 Cutlass Supreme coupe
6.0L/EFI/T56 in a '95-'97 C1500 extended cab short bed pickup
and some more that I could handle as well:
6.0L/EFI/4L80E in a '76-'78 Chrysler New Yorker
6.0L/carb/T56 in a '72 Gran Torino fastback
4.8L/EFI/200-4R in an 80s Buick Estate Wagon
*the something could even be a rusted out Buick Century like this one coming up for sale at the local police auction this Saturday morning and I bet I can bring it home for $200 or less.

I see LS4's in running condition anywhere from $700 to $1200 within 400 miles of me. Found an F40 trans for $700 with like, 40K miles on it. Could be done, though I'd be just as likely to drop a Caddy 4.9L in there.
