disassemble the accelerator pedal & position sensor
My two options are to try and find a nearby shop (moved since having original work done) bend the new pedal arm to fit, or try and disassemble the old and new units and swap over the old pedal arm that has the appropriate bends. My question is this: can I simply drill out the rivet where the pedal arm connects to the assembly and slide it off, or is there something connecting it to the sensor that I can't see, and drilling out the rivet will screw up the sensor?
What vehicle did the pedal come from
There are a few commonly used swap pedals. Im assuming since you jad a shop do this the first time you arent set up to weld or fabricate.
My first path would be to use a factory pedal and modify the vehicle mounting point to work.
Second would be to use vehicle mounting point which likely need modified, mount the pedal, cut and weld the pedal arm at the correct angle, this is dicey as the swing may not align with the sensor.
your pedal arm has been bent to kinda meet the second scenario.
can you post pics of the attachment points of your modified pedal arm, and we can suggest some options, whether you have the tools on hand to accomplish it will be the decision point.
the modified pedal failed for some reason, lets try to figure that out too, so you dont have to do it again.

quick search on rockauto shows ACDelco 25830024 as a 2006-2007 monte carlo 3.5V6 or 5.3V8 pedal assembly
reason Im asking....does this pedal output align with your ECM, are you getting the correct signal to be sure this doesnt fail again in the near future. Basically did the shop choose the right pedal for you the first time.
if youre going to mod a pedal assy, be sure its a pedal assy that will be useful long term.
Some of the commonly used pedal assys for swap have different mounting angles. That may not need as much fab work.
if youre set on using this pedal, lets see how the attachment points work. How to replicate the rivet youre drilling out needs to be covered. If you have room for a bolt to replace it with the pedal swing.

I had a scanner running during the last time it happened, and this was the sensor output when it went out:

The error got thrown at the point where the signals from the D and E sensors went out of sync.

And you are correct, I don't have a setup here to cut-weld the arm.
