'03+ throttle

'03+ throttle I have found a 6.0L '03 engine for my '79 Chevy 3/4ton at a local junk yard but they said the throttle is electronically controlled starting with 03 and above. Is there a workaround for this?

The electronic throttle works very well for swaps. I Have had both Speartech and S&P tell me that they are doing about 50% of theirs that way. You will need the pedal, the throttle control module and the wire harness for it to go along with your electric throttle body. You should be able to negotiate those as a part of your engine purchase. By doing this you also get the cruise control built into it.
If you decide to go the cable route you will need to swap a cable actuated throttle body(check the classified forum and Ebay) and get a throttle cable. You will need to drill out a couple blank holes to mount the cable bracket. The PCM will need to be modified for the different throttle type.
I have the electronic throttle in my '01 Silverado and it works fine, I am planning to use one on my swap too.
