LS2 or LS6
LS2 has a bigger bore so the valves are less shrouded which equals more power potential normally aspirated.
If needing a custom tune on a factory PCM, the aftermarket hasn't cracked the latest crank reluctor wheel. So you have to stick with the stock tune for now...if using an aftermarket engine control system I think support is there.
LS2 uses the drive by wire. I assume for your retrofit you'd have to convert to cable operated throttle. I don't know what's involved, but it's probably not a big deal.
I think the easiest swap is to get an LS1 salvage that includes computer, harness, transmission as well as all accessories and brackets. Then you can cam/head swap this to get over 400 hp. The total cost for the horsepower is better, plus you can custom tune that PCM.

Doesn't this require the OEM computer? What if you were using a BS3, Gen VII, or FAST system as your computer controller? Don't know if any of those handle the drive by wire.
Otherwise, I agree with all of your assessment.
