Do I even need to install cat/converters?

Do I even need to install cat/converters? The LS1/T56 combo in my 57 Nomad doesn't yet have an exhaust system (just the stock exhaust manifolds), so as I map out my options for building a new exhaust system, I'm seeing that many of you have eliminated your catalytic converters altogether.
I have the stock computer (from 2002 Camaro) in here, so is there some special "flashing/cleaning of the memory" that will need to be done if I build an exhaust system that doesn't run cats? Is this something I can do myself with software and a laptop with the proper ECM plug?
One more question, as I think this through: Do I need to add in another o2 sensor in the back of the exhaust system somewhere fin order for the ECM to function correctly?

No you don't need Cats for engine to run properly. You need front 02 sensors.
You can eliminate things you don't need like EGR, rear cats, VATS, etc easily w/ HP tuner or similar product. Tuning the PCM is best done on a dyno.

Mine runs fine with no cats and just two oxygen sensors, it even blows good numbers on the smog machine. My son did the programming with his EFI Live softwear and it runs pretty hard and still gets over 20 mpg.
