Can you just switch to a mechanical throttle body and mount up a trhottle bracket?

The search function is your friend. You will find this has been discussed in a few threads now.

If you want to keep your 03 harness and PCM this is the process a few others have used.

You will need to find a mechanical throttle and add intake air and throttle position leads to your harness.

You will also need to have your PCM flashed for a sierra van program and change the harness pins to suite this OS. The diagrams for the van can be found in the FAQ section. There are some changes that may need to be made to the OS depending on your fuel and transmission combination.
