whats was your 1/8 mile split?
It's all relative really. Because mine is a manual, they give me an extra overdrive than the auto...thus helping me out with my gas mileage. An auto's 1st gear is going to redline at say 50mph while the manual's 1st gear is going to have a little more get up and go but will redline at say 43mph. At higher speeds, the higher geared cars (2.73 or 3.23) are going to have more speed thus faster. Of course, it really depends on what kind of rwhp you're putting down!!
All normal Z28's, Formula's, and TA's, were base 2.73's with an option for 3.23's. Unfortunately that option was not checked nearly as often as it should be, and many of the normal cars are saddled with 2.73's.
In reality 3.23's are good for about 0.1-0.2 tenths in the quarter, and they make the cars feel much livelier around town.
But 2.73's are a great highway gear. Grabbing 2nd for a 70-95mph WOT rush on the highway is pretty nice.
I have 2.73's and so long as I'm traction limited, I have no problem with them. The higher gears are a pretty big advantage when you start doing traction upgrades, though.
