Default Cooling issue

Wasn't really sure where to put this, But I have a 1998 Camaro with th350, 4000rpm stall, and 4.11 gears, and stock cooling system with a 160 tstat. Its pretty much a dedicate drag car that I drive on the street every once in a while. The issue I'm having is if I just let the car sit and idle with both fans on the temp will sit at about 160-170. When I start driving the temp will go up to about 205 (I'm not sure if it will go over this since I haven't tried), then when I come to a stop the temperature will start to go back down again. I've never seen this in a car before. Any insight?

Could it be an issue with the way the fans are tuned?

How fast are you going and are the fans on when you're driving?

Far more people hang out in chassis--->general maintenance. Might be worth posting in there too. Get more views.

It does this even with both fans (manually) switched on at all times.

Are you still running your front air dam? Are there any obstructions in front of the radiator (ie, trans cooler, condenser, etc)? A decent upgrade is a stock lt1 radiator as the core is larger but you should be fine with the stocker. The issue is rpms are creating more heat than your system can get rid of with the airflow through the radiator.
