A bunch of questions based on an internet thread questioning his work isn't going to make your car run better, but it will certainly build resentment and eventually he will probably just start avoiding talking to you.
I don't know enough about a SD tune in general much less one that doesn't use o2 sensors to offer much advice.
Tuning for speed density is easy you turn off the MAF and get the VE table dialed in (there is more to it but cliff notes here) and you go thru the same process to tune the MAF. You have to get the VE table dialed in for either tune because they both reference the VE table for fueling. The fact that he cant change a tune from SD to MAF throws up a lot of red flags. If going back to MAF, you just turn it back on and dial that in. The only difference between the two is speed density usually gives you better throttle response.
